Here is our second blue-themed recipe of the week, by Adriana! We hope you are having a fun awareness week!!

Free from: Dairy/ tree nuts (except coconut)



Ingredients:

- 1 3/4 cup flour

- 2 tsp baking powder

- 3/4 cup sugar

- Orange zest

- Juice of one orange

- 1/4 cup coconut oil

- 1/2 cup coconut milk or yogurt

- 2 eggs

- 1 bag frozen blueberries


Steps:

1- Mix dry ingredients in bowl.

2- Zest orange and add to sugar.

3- Add sugar bowl to flour mixture.

4- Juice 1 orange, add with egg and

yogurt to main flour bowl.

5- Mix all ingredients together.

5- Bake 20min at 400F until golden.

Happy food allergy awareness week!! Our first themed recipe is these Blueberry Mini Pies by Maria!

Free from: all major allergens depending on ingredients used



Ingredients:

- Pie dough

- Frozen blueberries

- Lemon juice + zest

- 2 tablespoons cornstarch

- 2 tablespoons sugar


To make:

1- Roll pie dough and place cut

circles into circular molds

2- To make the fruit: cook the

berries, lemon juice, lemon zest,

cornstarch, and sugar on the

stovetop.

3- Fill the crusts with the fruit filling.

4- Bake at 375 for around 20

minutes.

Hi, my name is Maria, I am a sophomore, and this is my third year being a part of TAG. I am allergic to peanuts, tree nuts, legumes, and some fish. In my free time, I love baking and going to the beach!

Tools:

  • Rubber spatula

  • Measuring cup spoons

  • 2 sheet pans

  • Medium bowl

  • Parchment paper

Ingredients:

  • 1 tablespoon ground flax

  • 5 tablespoons water

  • 6 tablespoons avocado oil

  • 1 box Partake brownie mix

Instructions:

  • Preheat oven to 350°F.

  • Mix the flax and 3 tablespoons of water together. Let sit for 10 minutes.

  • Add the remaining 2 tablespoons of water, avocado oil, and brownie mix.

  • Scoop the dough into approximately 18 cookies and place them evenly spaced on a sheet pan. Press down on each cookie to flatten it out.

  • Bake for about 16 minutes.

  • Cool the cookies for at least 10 minutes before removing them from the pan.

  • Enjoy!
